Introduction

These ingredients aren't exotic but they make a great stew! I'd rather have potatoes than noodles, myself...you could also add some turnips and not add many more calories. Ingredients

    6 cups chicken broth, made from boiling leftover chicken carcass
    4 chicken thighs with bones & skin removed, diced
    1.5 cups diced potatoes
    1.5 cups sliced carrots
    1.5 cups sliced celery
    Some thyme and basil and salt to taste

Directions

Prep time is cut down if you've already made your broth, or if you use canned broth.
Cut up chicken thighs, potatoes, celery, carrots.
Bring broth to a boil, add everything, lower heat to medium-low and cook until deliciously tender,
approximately 25 minutes, more if you like it more tender.
Add some thyme, basil and salt if you like it.
Makes 6 1.5 cup servings.
