    1 Cup Water
    1 Pound mushrooms, cleaned and sliced
    1 tablespoon olive oil
    1/4 cup heavy cream
    1/4 cup grated parmesan cheese
    dash of black pepper


Bring water to a boil in a saute' pan, add mushrooms, and boil slowly 4 to 5 minutes. Drain and pruee in a blender, adding olive oil and cream. Empty into a bowl and stir in cheese and pepper to taste.

This is a favorite recipe of mine from The Carbohydrate Addict's Cookbook. Quick and easy to make. Great tasting!

  • Incredible!
    mine didn't seem to come out as creamy and I can't figure out why but it was soooo delicious just the same! This is a dish I will make for my work lunches! Loved it! - 2/3/13

    So easy and so delicious. I sauteed the mushrooms in the olive oil with a little garlic. Then just added the cream and cheese and pureed it with a stick blender right in the pan. I will definitely make again. - 11/1/12
