Ingredients

4 khobez (wholemeal flatbreads, like single-layer pittas)
170g tub light guacamole
160g spinach, steamed, water squeezed out, chopped and seasoned
2 chicken breasts, cooked and diced
150g ball mozzarella, shredded
50g cheddar, grated
200g tomatoes
1 garlic clove
30g rocket or arugala
Directions
Thickly slice the tomatoes, season, top with little slices of garlic and a sprinkle of oregano and place in an oven at 75C for 2-3 hours until semi-dried. (Alternatively, use an equivalent quantity of ready-made sunblush tomatoes.)
Heat a frying pan or grill pan on a medium heat.
Dampen both sides of the first flatbread with a little water on your fingertips and put it in the hot pan.
When it's lightly toasted on one side, turn it over. Spread a quarter of the guacamole onto it, then arrange a quarter of the mozzarella, chicken, spinach, tomatoes and cheddar on top and keep heating.
When the mozzarella is just starting to melt, add a quarter of the rocket/arugala and fold the flatbread over, and slide onto a plate (or onto a baking sheet to place in the oven to keep warm until you've finished!)
Repeat with the other three flatbreads.
