I live alone, and wanted to make a small batch of a healthier version of my favorite oatmeal cookies recipe. Hence, the oddly portioned ingredients.     * 3 Tablespoons Butter flavored Crisco
    * 3 Tablespoons white sugar
    * 3 Tablespoons packed brown sugar
    * 1 egg white
    * 1/4 teaspoon vanilla extract
    * 1/3 cup all purpose flour (could use wheat)
    * 1/4 teaspoon baking soda
    * 1 pinch of cinnamon
    * 1 pinch of salt
    * 2/3 and 1 tablespoon of quick oats
    * 1/4 cup dried cranberries or raisins

1. 1. Preheat oven to 375 degrees F (190 degrees C).
2. 2. place dried cranberries or raisins in berry colander in a bowl. Fill with hot water while making the dough.
3. 3.In large bowl, cream together butter, white sugar, and brown sugar until smooth. Beat in the eggs and vanilla until fluffy.
4. 4.Stir together flour, baking soda, cinnamon, and salt. Gradually beat into butter mixture.
5. 5.Stir in oats and raisins. Drop by teaspoonfuls onto ungreased cookie sheets.
6. 3. Bake 6 to 8 minutes in the preheated oven, or until golden brown. Cool slightly, remove from sheet to wire rack. Cool completely. Enjoy!
