Ingredients

    A cast iron grill pan with relatively high sides that can be used on a stove top and in an oven
    2 Pink Salmon Fillets
    Bottle of white wine
    3 Tbsp of Smart Balance Butter Light
    A Cajun Spice of your choice

Directions

Preheat oven to 525 degrees for 30 min before cooking
Cover salmon with cajun spice
Have grill pan on stove top heated on medium to low heat so that after the oven has preheated for 30 min, the pan will be evenly heated.
Place the 2 fillets - spice down on pan for 1-2 min (depending on preference) just to seer the tops.
Flip the fillets, add 3 Tbsp of smart balance butter light and about a 1/2 bottle of white wine (enough to just cover the fillets) and Immediately remove from stove top and place in oven for 15 min. (for 1 fillet, about 9 min)
Makes 2 fillets, 1 fillet serving, Enjoy!
