Ingredients

    25g butter
    1 tbs olive oil
    1 onion, diced
    1 red pepper, deseeded and diced
    2 pinches tumeric
    1 clove garlic, crushed
    400g spanish paella rice
    900ml hot chicken stock
    150g smoked ham, cubed
    150g prawns, peeled and cooked
    150g frozen peas

Directions

Serves 4-6

Heat butter and oil in a large, heavy, flat-base pan,
Stir in onion and pepper and fry for 3-4 minutes until soft.
Sprinkle over tumeric and fry for 30 seconds.
Add garlic and fry for 1 minute.
Stir in rice and fry for 2 minutes.
Add stock and allow to bubble rapidly, stirring continuously.
Reduce to simmer and add ham, chicken, prawns and peas.
Simmer for 20-30 minutes, stirring occasionally, until stock is absorbed and rice is tender and slightly sticky.
