Ingredients

    olive oil, boneless, skinless chicken breat, broccoli florets, frozen peas, red onion, chicken broth, dried basil, black pepper, brown rice, grated Parmesan cheese

Directions

Heat oil in lrge skillet. Add chicken, cook and stir until browned. Add broccoli, peas and onion; cook and stir until begetables are tender-crisp.
Stir in broth, basil and dash of black pepper. Bring to boil. Stir in rice. Return to boil. Reduce heat to low; cover and simmer 5 minutes. Remove from heat. Let stand 5 minutes. Stir in cheese. Serves 4
