Introduction

Use this yummy filling for enchiladas, burritos, quesadillas, empanadas, or stuffed peppers! Sppon it over mixed greens for a salad! Eat it cold, right out of the fridge. Ingredients

    1/2 pound grilled chicken, shredded
    1 c. black beans, rinsed and drained
    1 c. reduced fat shredded Colby-Jack cheese
    1 c. diced onion
    1/3 c. diced green pepper
    1/2 c. enchilada sauce

Directions

I rub the chicken with a dizzle of olive oil (calories not included here), sprinkle with salt, pepper and Mrs. Dash Southwest Chipotle seasoning. Grill on George Foreman.

Roughly chop cooked chicken then shred in food processor.

Add remaining ingredients and mix well. What you do with it next is up to you!
