Ingredients

- Approx 1.5 lbs 93% lean ground beef
- Medium green bell pepper, chopped
- small onion, chopped
- 15oz can light red kidney beans
- 15oz can dark red kidney beans
- 2 packages 1.25 oz chili seasoning mix
- 1 15oz can tomato sauce
- 1 15oz can diced tomatoes and green chilies
(cheese, sour cream optional)
Directions
Recipe calls for 8 servings - I was able to make about 12, near full cup servings, and I've adapted this recipe to do so.
Brown ground beef, bell pepper, and onion over medium-high heat in a skillet, drain well. Add to slow cooker.
Combine remaining ingredients in a large bowl, then add to beef in cooker; gently stir.
Place lid on slow cooker, cook on LOW 6 to 7 hours OR on HIGH for 3 to 3 1/2 hours until heated through.
Serve directly from slow cooker.
NOTES: I used a slow cooker liner and had a nice easy time with cleanup. I also tend to have a hard time with spicy foods, which is why I used a mild chili seasoning packet. I didn't top with any sour cream, but it tastes fantastic with a bit of taco seasoning sprinkled on it!
