Introduction

I like to cook up a batch of barley and freeze it in one cup servings to be used when I need it. This dish is solid enough for a lunch but would also be good as a side dish. Ingredients

    2 cups cooked Pearl Barley
    2 chopped italian tomatoes
    3 oz Fat Free Presidents Crumbled Feta
    24 small Canned black olives pitted
    2 canned in water artichokes
    1/4 chopped red onion
    1 tsp grapeseed oil
    salt to taste

Directions

Drizzle grapeseed oil on cooked barley. Toss with remaining ingredients. Serve chilled.
