Ingredients

    3 cups quick-cooking oats
    3/4 cup packed brown sugar
    2 teaspoons baking powder
    1 teaspoon salt
    1/2 teaspoon ground cinnamon
    1 large egg, lightly beaten
    2 egg whites (or dried equivalent)
    1 cup fat-free milk
    1/2 cup applesauce
    1 cup chopped peeled apple, preferably tart
    1/2 cup craisins, soaked in boiling water for 5 minutes & drained

Directions

This is a wonderful breakfast/brunch recipe and tastes great both hot and cold. You can add any combination of fresh or frozen fruit totaling 2 cups, such as peaches or blueberries, or even raisins, being sure to soak first in boiling water for 5 minutes to soften them. I usually throw the craisins in the microwave covered in water and zap them on the Beverage setting, then let them sit for a few minutes while I chop the apples.

In a large bowl, combine the oats, brown sugar, baking powder, salt and cinnamon. Combine the eggs, milk and butter; add to the dry ingredients. Stir in the apple, craisins, or other fruits of choice.Pour into an 8-in. square baking dish coated with nonstick cooking spray. Bake, uncovered, at 350° for 35-40 minutes or until a knife inserted near the center comes out clean. Cut into squares.

Note: If using frozen blueberries, do not thaw before adding to batter.
