    4 cups potato, boiled, peeled, diced
    2 stalks celery, diced
    2 leeks, chopped, white only
    6 TBSP Veganaise
    1 TBSP light italian dressing
    1 tsp dijon mustard
    5 pimento stuffed olives, chopped

mix all together & refrigerate til serving time.
