Ingredients

1/2 cup almonds
1/4 cup Fresh whole wheat bread crumbs
2 tbsp Chopped fresh tarragon or 1 tsp dried
1 tsp grated lemon rind
1/4 tsp each salt and pepper
1 tbsp canola oil
4 haddock fillets, each 4 oz
lemon wedges
Directions
1. Place almonds in food processor, pulse until almonds resemble coarse bread crumbs. Remove to large pie plate or shallow dish. Add bread crumbs, tarragon, lemon rind, slat and pepper and combine.
2. Pat fillets dry using paper towels. Brush some of the oil over fish. Dredge in nut mixture to coat both sides.
3. In non-stick skillet, heat remaining oil over medium-high heat. Brown fish on both sides. Place fillets on parchment paper-or aluminum foil-lined baking sheet and roast in 425 degree F oven for about 10 minutes or until fish just flakes with fork. Serve with lemon wedges.
