Jalapeno halves stuffed with cheese, then baked. Jalapeno halves stuffed with cheese, then baked.

    12 Jalapenos
    8 tbsp. Light cream cheese
    1 cup cheddar cheese
    Panko bread crumbs


Slice jalapenos in half, and wearing gloves carefully scoop out seeds and membrane. Place on a rack over a baking sheet lined with foil. Set aside.

In a bowl, mash cream cheese with grated cheddar. Mash the cheese mix into the hollowed peppers - overfill. Dip each popper face down into panko crumbs.

Bake in a 400 oven for 20 to 25 minutes. Watch for the last 5 minutes to make sure they donít get overly brown.

Makes 24 appetizers.
