Ingredients

    2 cloves garlic
    2 cups firm tofu, chopped
    3 tbsp. olive oil
    2 tbsp lemon juice
    1/2 tsp salt
    1 tsp miso
    1/4 tsp rosemary

Directions

In food processor, mince garlic
Add tofu, oil, lemon juice, salt, miso and rosemary
Process, using pulse button. Stop and scrape the sides of the food processor periodically. The mixture shouldn't be totally smooth, but more lumpy or granular, like real ricotta.
