Introduction

Small batch of muffins made with no added fat. Uses a blend of all-purpose and soy flour.
Double recipe to make a full dozen.

Ingredients

    Flour, white, .5 cup
    Soy Flour, .5 cup,
    Date Molasses Clic, 1 tbsp
    Egg substitute, liquid (Egg Beaters), 2 tbsp
    Zucchini, .3 cup, shredded
    Apple Sauce - unsweetened, Our Compliments, 3 Tbsp
    1/3 c water
    Cinnamon to taste
    vanilla extract to taste

Directions

Grease half dozen muffin tin (6 muffins). Mix wet and dry ingredients in separate bowls, then add wet ingredients to dry all at once and stir until just blended. Fold in grated zucchini and fill 6 cups of the muffin tin. Bake in pre-heated oven 375 deg F for 15 minutes or until done.
