Ingredients

    .5 Cup Sun Dried Tomatoes
    1.5 Cups Vegetable Broth
    1.5 cups Couscous
    .5 Cup Reduced Fat Feta Cheese
    1 Cup Chopped Parsley
    2 - 6oz Jars of Marinated Artichoke Hearts with marinade

Directions

Soak sundried tomatoes in boiling water for 15 minutes, until soft & then chop. Cook couscous according to directions, with vegetable broth. Mix tomatoes, couscous & rest of the ingredients in a bowl. Season with black pepper.
