Ingredients

    1 box cake mix (any flavor)
    2 ripe bananas
    1/4 cup unsweetened applesauce
    1 large egg
    1/4 cup egg substitute
    1Tbls. Flax seed plus 3 Tbs.(1 1/2 oz) water
    1 cup water

Directions

Makes 24 cupcakes

Preheat oven 350 degrees. Line muffin pan with paper liners.
Mash bananas, add the rest of the ingredients. Mix slowly for 30 seconds, then mix on medium speed 2 minutes more.

fill cups 2/3 full and bake 17-22 minutes at 350 degrees.
