This super flavorful chicken salad is great served in a juicy tomato, on a bed of lettuce, or toast. The crunchy celery and fresh onion bring it all together. Ingredients

•1 lb boneless skinless chicken breasts
•Garlic and herb seasoning
•3 tbsp apple cider vinegar or to taste
•1 cup mayonnaise or to desired texture
•3/4 cup chopped sweet onion
•3/4 cup chopped celery
Lettuce
Directions
Sprinkle seasoning on both sides of each chicken breast. Fry in a nonstick skillet with glass lid, sprayed with nonstick spray, on medium heat until done.
While chicken is cooking, chop onions and celery, then set aside. Remove chicken from pan and place on a cutting board. Cut chicken into 1 inch pieces and let cool.
When chicken is cool, finely chop, but do not mince, then place into bowl with seal tight lid. When all chicken is chopped, add mayonnaise, vinegar, onions, celery, sprinkle 1-2 tbsp seasoning on top, then mix well. Refrigerate overnight for best flavor.
