Ingredients

    Flour, white, 2 cup
    Baking Powder, 3 tsp
    Salt, .5 tsp
    Baking Soda, .5 tsp
    Granulated Sugar, 1 cup
    Apricots, dried, .75 cup, halves, chopped
    Lemon rind, 1.5 tsp, grated
    Walnuts, .5 cup, chopped
    Butter, unsalted, 2 tbsp
    Egg, fresh, 1 large
    Milk, 1 cup

Directions

Preheat oven to 350 F
Sift together first 5 ingredients
Stir in apricots, nuts, and lemon rind
Add the wet ingredients all at once and stir only enought to moisten. Do NOT beat.
Pour into greased loaf tin and bake for 1 hour.

    Very Good
    This was very moist and not too sweet. I left out the lemon rind (didn't have any). I will be making this again. I shared the bread & recipe with my co-workers. Thanks for sharing the recipe. - 2/12/11
