Ingredients

3 Tbsp. organic Butter, salted
2 Tbsp. Organic Olive Oil
1 large sweet onion, chopped
1 organic Leek, thinly sliced or chopped (white and 1/3 of green)
4 cloves Garlic, minced
1/2 bunch fresh Parsley, chopped
6 medium fresh tomatoes, sliced
About 12 - 13 cups homemade Fish Broth [or use half chicken broth and half fish or clam broth]
1 cup White Wine (we use alcohol-free variety)
18 ounces fresh wild-caught Pacific Cod fish, cubed
16 ounces fresh oysters
12 ounces salad shrimp
2 Bay Leaves
1 Tbsp. dried Basil
1/2 tsp. dried Thyme
1/2 tsp. dried Oregano
Directions
Over medium-low heat, melt butter and olive oil in large stockpot. Add onion, leek, garlic and parsley. Cook slowly, stirring occasionally until the onion and leek are soft.
Add tomatoes to pot. Add fish broth, bay leaves, basil, thyme, oregano, and wine. Mix well. Cover and simmer 30 minutes.
Stir in the cubed fish. Bring to a boil. Lower heat, cover, and simmer 5-7 minutes until done [fish flakes easily].
Makes about 5 qts: 12 - 13 servings (1.5 cup each)
