Ingredients

3 cups flour
1 tsp. baking soda
3/4 tsp. salt
1 cup (2 sticks) unsalted butter, softened
1 cup, packed, brown sugar
3/4 cup white sugar
2 large eggs
1 tbsp. vanilla extract
1.5 cups dried cranberries
10 oz. package of white chocolate chips
1 cup coarsley chopped roasted macadamia nuts
Directions
Preheat oven to 350 degrees. In a large mixing bowl cream butter and sugars until fluffy. Add eggs one at a time and beat until incorporated. Add vanilla and beat until incorporated. Add flour, salt, and baking soda. Mix until well combined.
Using a spatula, add in the dried cranberries, white chocolate chips, and macadamia nuts. Mix well.
Drop by rounded tablespoons (or use a large cookie scoop) on a greased cookie sheet. Bake for 11 minutes, or until sides and top begin to brown. Let cool on cookie sheet for 2 minutes then transfer to wire racks.
Makes approximately 50 cookies.

LOVE LOVE LOVE this recipe!!!! It is so delicious & it's still great after 2 wks of baking (of course if kept in a ziploc/air tight container). The grocery store ran out of the white chocolate chips so I used chocolate kisses & just crumbled them into smaller pieces & it still turned out great!! :) - 3/16/11
