Introduction

Ingredients

    9 lasagna noodles, whole wheat
    1 pkg. Italian chicken sausage (4 links)
    1 jar (26 oz) pasta sauce
    2 cups part skim ricotta cheese
    1/2 cup cottage cheese (optional)
    2 eggs (Omega 3 preferable)
    2 cups part skim mozzarella cheese
    1 tbsp Parmesan (optional)
    1/2 tsp olive oil
    salt
    pepper
    parsley

Directions

Preheat oven to 350, and start water to boil noodles as directed. Heat a skillet with a 1/2 tsp of olive oil. Slice the sausages down the center then cut into small half circles and add to skillet. Cook and drain fat is desired. Add jar of pasta sauce and simmer about 10 min. In a bowl combine ricotta, cottage cheese, eggs, and half (1 cup) of the mozzarella, dash salt, pepper, and parsley.

After draining the noodles, put 1/3 of the pasta sauce mixture in the bottom of a 9x13 pan, add 3 noodles over the sauce. Add half the cheese mixture, and another 1/3 of the sauce, then another noodle layer and the rest of the cheese mixture, layer the last 3 noodles, then top with the remaining sauce. Cover this with the other cup of mozzarella cheese (and sprinkle with parmesan if desired).

Bake for 40 min. Cool for 5. Slice into 3 rows (following noodles) and slice each row into three, for 9 servings.
