Ingredients

    Cake
    1 package yellow cake mix
    4 tablespoons red food coloring
    2 tablesspoons unsweetened cocoa poweder
    1/4 cup vegetable oil
    5 eggs
    1 cup buttermilk OR
    *1 cup 2 percent milk and 1 tablespoon distilled vinegar

    Icing
    2 cups and 2 tablespoons of powdered sugar
    4 tablespoons softend butter (unsalted)
    8 oz cream cheese softened
    1 teaspoon vanilla



Directions

Blend cake ingredients together with blender or stand mixer as package instructions on cake mix.

Bake for 18- 21 minutes. I found this recipe online it states it make 24 cupcakes. It made about 28 cupcakes for me.

Blend all Icing ingredients together. Fully cool cupcakes before icing.

*If you like a more chocolatey red velvet you can add extra cocoa powder. I didn't have buttermilk so I made my own with 2 percent milk and vinegar. Let it sit for 5 minutes before adding to cake mix.
