Introduction

Ingredients

    8 Chicken Thighs (bone and skin removed)
    12 oz or 2 links Richards Andouille Sausage, sliced
    6oz Kary’s Dry Roux
    2 tsp Salt
    3 tsp Black Pepper
    1/2 tsp Red or Cayenne Pepper
    1 medium Onion, chopped
    9 quarts water

Directions

Using one large pot bring 9 quarts water to boil. Add dry roux. Stir until dissolved. Add remaining ingredients to pot. Bring to boil. Reduce heat and simmer for 2 hours. Serve over rice. Makes 10 - 1.5cup servings.
