Ingredients

    1 cup flour
    2 tsp cinnamon
    1/2 tsp salt
    1 tsp baking soda
    1/2 tsp nutmeg
    1 tsp cloves
    1 tsp allspice
    1 cup quick dry oatmeal
    1 cup unsweetened aplesauce
    1/2 cup light olive oil
    2 medium eggs
    2 tsp vanilla
    1/2 cup raisins

Directions

Mix dry ingredients and raisins. Add applesauce, oil, eggs, vanilla and mix just to moisten. Drop on greased sheets. Bake at 375 degrees for about 12 minutes.

    Incredible!
    I used a mixture of McCann's Irish Oats and Mornflake's Scottish Oats, both are a hardier oat than your typical rolled oat. I used halfsies of dates and raisins and added 1/2 cup of walnuts. Can't have an oatmeal cookie without nuts. - 2/10/11

    I added a few tbs honey to sweeten a little more and used chocolate chips instead of raisins. Very light and tasty! - 6/16/10
