Spinach Quiche for Kids (big batch version, some to serve, some to freeze)

Introduction

WOW! This is spinach? This is a quote from my 11yr old. son who hates (his words) spinach. Even my picky 2yr. old and my husband who thinks ketchup is a vegetable ate it. It may not be the lowest in calories (ingredients can easily be substituted for lower calorie counterparts) but it is loaded with lots of nutrients. Quiche is also a great way to get "rid" of leftovers not quite big enough to serve. The bacon and rice were things I just had in the fridge. WOW! This is spinach? Ingredients

    1 dozen eggs
    1 cup 2% milk
    1 cup ricotta
    1 cup shredded cheddar
    1 cup shredded mozzarella
    1 serving cooked turkey bacon
    1 pkg frozen spinach
    1/4 cup cooked white rice

    3 frozen pie crusts

Directions

Mix everything, except the crust :), in a large mixing bowl,stir until loosely combined. I have three sons...I don't have time for complicated. Pour into frozen pie crusts. Bake at 400 degrees for 35-40 min. makes 3 quiches (8 pieces each). I thought I would be serving one and freezing two, but my family loved it so much, I was lucky to freeze one.
This also a good recipe to make with kids. I let the 11yr old grate cheese, 4yr old and 2yr old+, each added in cheese, bacon, spinach, rice(no "raw" meats to handle). They love to toss things into the bowl. Sometime soon I'll have to create a recipe with more fractions for math practice along with nutrition lesson.

    Excellent! Did not use bacon or rice. Will add a bit more egg and veg next time, just to fill the crust a bit higher, but super yummy. Husband raved! - 3/21/10

    I made this recipe Saturday only I substituted the ricotta cheese for low fat cottage cheese and added one sausage link and 4 mushrooms. I also only made 2 pies. Great and simple recipe. My first time making quiche. - 7/5/11
