Number of Servings: 18

Ingredients

    2 tbsp Cinnamon, ground
    0.50 tsp Salt
    1 large (3-1/4" dia) (approx 2 per lb) Apples, fresh with skin
    0.50 cup, packed Raisins, golden seedless
    1.50 cup, strips or slices Carrots, raw
    1 cup, packed Brown Sugar
    2 serving Eggland's Best Large Egg
    1 cup Whole Wheat Flour
    2 tsp Baking Powder
    16 tbsp Flaxseed (milled)
    0.75 cup lactaid ca fortified fat free milk
    2 tsp Arm & Hammer Baking Soda
    1 cup Steel Cut Oats, dry

Directions

Mix flour, flaxseed, oats, brown sugar and dry ingredients together. Shred carrots and apples and add these along with raisins to dry ingredients. Mix well. Stir together milk, eggs and vanilla. Stir this into batter until well moistened. Fill cupcake papers until 3/4 full and bake at 350* for 20 to 25 minutes.
Makes about 18 med muffins.
