Ingredients

    1 med. butternut squash, peeled, seeded and diced coarsely
    3 apples, cored and diced
    Butter, salted, 2 tbsp
    Onions, raw, .66 cup, chopped
    Swanson Chicken Broth 99% Fat Free, 3 cup
    Cinnamon, ground, .5 tsp
    Nutmeg, ground, .25 tsp
    Ginger, ground, .25 tsp
    Flour, 4 Tbsp
    Salt, .25 tsp
    Pepper, black, .25 tsp

Directions

(If using cooked squash, add about 2-3 cups when you add chicken broth.)

Melt butter in soup pot. Add squash, onion, apples and seasonings. Saute for five minutes with frequent stirring. Do not brown. Add flour and mix well. Cook, with constant stirring for two minutes. Add chicken broth and mix well.

Cover and simmer over low heat for 30-35 minutes with occasional stirring. Puree in food processor or with stick blender. Add salt and pepper to taste. Serve hot.

    This was easy and tastes good. I used less butter and added a small amount of brown sugar for sweetening so my kids might eat it. - 3/6/11

    Tried this tonight but didn't have the onions or broth so I used apple juice and it came out good. My 8 month-old loved it too. - 10/25/10

    Very good! I couldn't decide between this recipe and one by Paula Deen, so I ended up with elements of both! Used apple cider instead of broth, and a touch of curry in addition to the cinnamon and other spices. - 9/26/09

    Very tasty. Fed it to my 6 month old daughter as well - she loved it. - 11/7/07
