Introduction

First attempt at adding protein powder to pancakes ... success! If anything, could be moister. More yogurt, maybe. First attempt at adding protein powder to pancakes ... success! If anything, could be moister. More yogurt, maybe.

Ingredients

    DRY:
    3/4 cup whole wheat flour
    1 cup oats
2 scoops whey protein powder (I used 1 choc/1 vanilla)
    1 packet truvia
1/2 tsp (I used less) salt
    1 tsp baking soda
    WET:
    1/2 cup plain low-fat yogurt
1/2 cup milk (I use almond milk)
    2 eggs
2 Tbsp melted "butter" (smart balance, margarine, etc)
Lemon juice ... few drops to taste
    Spices:
Cinnamon, Ginger, Nutmeg, Cardamom to taste
    Fruit:
    2 Under-ripe bananas, sliced
    1/2 cup frozen blueberries
(Could add chopped apple, other frozen fruit, nuts, etc)

Directions

Whisk dry ingredients, including spices (sorry ... I tend to not measure)
Whisk wet ingredients
Make a "well" - add wet to dry
Stir in Banana
Drop batter onto prepared griddle - a 3/4 of the way full 1/4 cup measuring cup works well
Press down - they're a bit thick
Add blueberries to taste after putting batter on griddle
Made 12 pancakes
