Ingredients

    -3/4 cup wholewheat spelt flour [finely grinded]
    -3tbsp oats
    -3/4 cup non dairy milk
    -2 tbsp water
    -1 tbsp agave syrup
    -2 tbsp grapeseed oil
    -pinch saltι
    -1 tsp vanilla extract
    -1tsp lemon
    -1 tsp baking powder
    -1/2 cup frozen [or fresh] mixed berries [blueberries, raspberries, blackberries, strawberries]
    -maple syrup for drizzling

Directions

First mix milk and lemon juice and set aside for 5 minutes. Mix flour, oats, salt and baking powder.
In your blender add the milk, oil, agave, water and vanilla. Now add the flour mixture and blend.
Heat up a small frying pan and spray with oil. Pour some batter [ 2 tbsp approx.] Now sprinkle some frozen [or fresh] mixed berries on it and when it starts bubbling turn upside down. Cook for 3 more minutes and continue with the rest of the batter. While making them, keep the ready ones in preheated oven so that they are still warm when you eat them.
This will make you 7-8 small pancakes. I find that they are very filling, so I would say this is makes two servings, but if you are really hungry you could eat them all. I’m the king of person that eats 2 regular pancakes and feels like blowing up. So make your calculations and double this if you wish.
Serve with pure maple syrup!
