Number of Servings: 12

Ingredients

    1 can of rotel diced tomatoes
    2 lbs of shrimp
    4 Chicken boullion cubes dissolved or 2 cans of chicken broth
    1 can of Del Monte Diced Tomatoes (1 lb can)
    1 2 lb bag of Frozen corn

Directions

Pour frozen corn, rotel, can of diced tomatoes, and boullion cubes or chicken broth into pot cook at medium temperature for about 2 and a half hours. More then likely water will need to be added during this time. In the last three minutes or so of cooking, add shrimp. (Cooking shirmp for longer will make them chewy and this is the recommended time for cooking them) This can also be cooked in the crock pot, just add shrimp and when they turn white and middle has split they are done. This is a very easy and quick recipe and low on fat and carbs! Makes 12- 1 cup servings
