Introduction

inspired by sweet potato and black bean chili, but wanted to use dried beans. inspired by sweet potato and black bean chili, but wanted to use dried beans.

Ingredients

    2 cups chopped onion
    2 small bell pepper chopped
    3 c dried pinto beans
    1000 grams cubed sweet potato
    (about 4 lbs before skins removed )
    28 oz can diced tomato
    1 tbs chili powder
    1 tsp cumin
    1 tsp dried oregano
    salt and pepper to taste
    12 c water


Directions

in large pot bring ( rinsed ans sorted) dried pinto beans,12 cups water, onion, bell pepper, and seasonings to boil covered for 3 hours, or until beans are tender, then add sweet potato and tomato and boil uncovered 1 hour or until desired consistency, add water if needed. salt and pepper to taste before serving.
