    Active Dry Yeast 1 Tbsp.
    Water, warm 2 fl. oz.
    Bread flour 14 oz.
    Water, cool 6 fl. oz.
    Salt 1 tsp.
    Olive Oil 2 Tbsp.
    Honey 1 Tbsp.


1) Mix the Active Dry Yeast with 2 fl. oz of warm water and stir until it has been dissolved. Add the flour to the liquid mix.

2) Stir in the remaining ingredients into the flour mixture (cold water 6 fl. oz., salt, olive oil, and honey). Knead the dough until it is smooth and elastic. (Appx. 5 min.)

3) Lightly grease a bowl and place the dough within it, and cover it with a towel or plastic. Let the dough to raise in a warm place for 30 min. After the 30 minutes punch down the dough and divide it into portions. (The dough can remained wrapped up and refrigerated for up to 2 days.)

4) Lightly flour a clear flat surface and roll the dough out into very thin round circles. Add the desired toppings to the top of the dough circles, and lightly brush the ends with olive oil to make it crisp. Bake at 400*F /200*C until it become golden brown and crispy, which is around 8-12 minutes.
