Introduction

Ingredients

1 chicken boneless skinless chicken breast
per person
1 whole wheat tortilla per person
(medium size)
1 packet of taco seasoning
(i use el paso)
*brown rice, 1 serving per person
Directions
1) fill half of a large pot with water
2) stir in taco seasoning
3) add your chicken and cover with lid
4) i start boiling on medium high, as the chicken
gets more tender i lower the settings so i can
start the rice
5) prepare rice according to directions on the
package ( i add some of the taco seasoned
water from the pot of chicken)
6) when chicken falls apart really easy take it out
and let it cool, then shred it with a fork
7) when rice is done, mix the rice with the chicken
8) warm up your totilla how ever you like it...
i just pop mine in the microwave for about 30
seconds between 2 paper towels
this recipe is for one serving. this dish is easy to add veggies to, i add hot sauce to mine, my mom likes italian dressing in hers, and my sister likes ranch. (all of those examples are not included in the nutrional information)
