Introduction

Potato salad made with Vegenaise and Tofutti Sour Cream, scallions, parsley, peppers, and onions. Potato salad made with Vegenaise and Tofutti Sour Cream, scallions, parsley, peppers, and onions.

Ingredients

    3 russet potatoes
    1/2 c Vegenaise
    1/4 c Tofutti Sour Cream
    chopped green peppers (to your liking)
    chopped onions
    Scallions
    salt and pepper to taste

Directions

Chop the potatoes into large chunks and boil for about 10 minutes till soft. Boil the peppers for a few minutes, add the onions at the end. Let the potatoes cool, cut into bite size pieces, and mix all the ingredients together. If it cools in the fridge for awhile, the flavors mesh together and it tastes really good!
