This dish has a pleasant 'bite' to it and the philadelphia cheese gives it a luxurious creamed taste. This is a high fibre meal so it is very filling and sustaining. Really delicious. Ingredients

    1 Tin of Mexican Style Beans (Asda) or other
    1 Tin Chopped Tomatoes
    30 grams Philadelphia LIGHT cheese - thats roughly a heaped teaspoonful
    50 grams chopped onion
    2 crushed cloves of garlic
    5 mls of Flora Sunflower oil
    1 teasp Basil
    1/2 to 1 teasp medium curry powder (use 1 if you like hot spicy)
    Good pinch of salt
    Good grinding of black pepper

Directions

Heat the sunflower oil in a saucepan and add the onions and garlic. Cook on a medium heat for a few minutes until the onion is transparent but not brown.
Add the basil and curry powder stir well - do not allow to stick or it will burn and spoil the taste.
Add the lime juice and stir well
Add the bens and tomatoes
Add the salt nd pepper
Cover and cook on low heat for 30 minutes
Stir in the philadelphia cheese


Makes 3 generous servings (approx 200 grams each)
Serve with hot pitta bread or other bread of your choice
