Introduction

A wonderful dish that is delicious and nutritious. A wonderful dish that is delicious and nutritious.
Number of Servings: 3

Ingredients

    2 tbsp olive oil
    1 cup onions, chopped
    2 medium carrots, sliced
    Salt and pepper to taste
    1 garlic clove or 1/2 tsp garlic powder
    1 butternut squash, cubed
    1 lb chicken breast, no skin, cubed

Directions

Add olive oil and onions on medium heat until soft.
Stir occasionally, turn heat on high, then add carrots, garlic, salt and pepper until brown.
Then add squash and chicken.
Turn heat on low and simmer with lid on pan.
Stir occasionally.

    This is a good one! Thanks. I used frozen organic butternut squash and steamed it in the bag before adding to the dish. I also added broccoli & mushrooms. - 10/8/12
