Introduction

Number of Servings: 12

Ingredients

    1 can (1 3/4 cup) canned pumpkin (not pumpkin pie mix)
    1 cup Stevia Extract in the Raw
    1 scoops Vanilla Casein (I like Optimum Nutrition Creamy Vanilla)
    1/2 Rice Flour (I blend long grain brown rice in the blender to make this)
    1/2 cup Instant Oats
    1/2 cup Rice Milk
    1/2 water
    1 Egg
    1 tsp. Vanilla Extract
    1 tsp. cinnamon
    1 tsp. pumpkin pie spice
    1 tsp. baking soda
    1 tsp. baking powder


Directions

Preheat oven to 425 degrees. Grease a 12-muffin muffin tin. Set aside.

Mix all ingredients together. Pour equal amounts in muffin tin. Sprinkle some cinnamon on top of the muffins. Bake for 20 minutes.
