Introduction

A variation of a favorite classic meal, with a healthy twist! Uses roughly processed oats and walnuts instead of breadcrumbs, and "flax-egg" instead of egg.

Great way to "sneak in" extra veggies for picky kids or husbands! :)

Moist but NOT mushy when baked in "mini-loaves."

Ingredients

    MEATLOAF:
    1 lb. lean ground turkey

    1/2 c. oats
    1/3 c. walnuts, chopped

    2 stalks celery, finely chopped
    1 large carrot, finely chopped or grated
    1/2 medium onion (white), finely chopped
    2 tsp. minced garlic

    1 T. ground flax + 3 T. water (for flax-egg)

    1/3 packet dry onion soup mix (optional, but included in stats)
    Oregano & Black pepper, to taste (or your favorite seasonings)

    GLAZE:
    1/4 c. brown sugar
    1/4 c. ketchup
    1 tsp yellow mustard
    dash of Worcestershire sauce

Directions

Preheat oven to 350 degrees F. In a small bowl, mix 1 T. ground flax and 3 T. water and set aside to thicken.

In a small food processor, pulse oats and walnuts until roughly ground. Empty, and set aside. Corsely chop celery and onion and combine in food processor with garlic to chop finely (or simply chop very fine, without processing). Chop carrot and process until fine, or grate/chop fine without processing.

Combine turkey, oats/walnuts, and veggies in a medium bowl. Mix in seasonings and flax egg.

Form mixture into 6 small "loaves" and place on a baking sheet. Bake for 20 minutes.

Meanwhile, mix glaze in a small bowl. After loaves bake for 20 minutes, remove and spoon glaze over the loaves. Bake an addition 10-15 minutes until meat thermometer reads 165* F when inserted in middle.
