Introduction

Made this for my family and myself this morning and it turned out fantastic! Hope you enjoy! Made this for my family and myself this morning and it turned out fantastic! Hope you enjoy!

Ingredients

    1/3 cup of egg beaters original
    1/3 cup of Weight Watchers Mexican Blend Shredded Cheese
    2 slices Turkey Bacon (I use Americas Choice)
    1/4 cup chopped green bell peppers
    1/8 cup of chopped onions
    1/4 cup broccoli

    Salt and Pepper to taste, though not needed. : )

Directions

*Chop up your broccoli, peppers and onions.

*I steam the broccoli in the microwave (to keep in nutrients) in a tbls of water for a minute in a half.

* Cook turkey bacon as per package and set aside.

* Spray a skillet with cooking spray and cook the peppers and onions on a medium heat for about 3 minutes. Put aside.

* Put your egg beater in a bowl and add salt and pepper (not needed) and scramble while the skillet is warming up.

* Pour your egg beaters onto a hot skillet with cooking spray and once firm flip it over. (This may take a bit of practice, but I always need to make sure both sides are well cooked).

* Put all your veggies on one half of the circle and sprinkle about 3/4 of the cheese over veggies.

* Fold over and sprinkle the rest of the cheese on top.

Serve with your turkey bacon and ENJOY!!
