Ingredients

    Cake

    2 1/3 cups all purpose flour
    2 1/4 tsp. baking powder
    1 1/2 tsp. cinnamon
    1 tsp salt
    1/2 tsp. ground ginger
    3/4 tsp. baking soda
    2/3 cup low fat margarine (at room temp.)
    1 3/4 cup packed brown sugar
    3 eggs
    2/3 cup buttermilk
    1 tsp. vanilla extract
    1 1/2 cups mashed bananas

    Frosting

    2 pkgs (8 oz. each) light cream cheese at room temp.
    3/4 cups butter
    1 tsp. vanilla extract
    3 cups icing sugar
    1 banana (cut into 1/4 inch slices)
    Cinnamon sticks (garnish - optional)

Directions

Preheat oven to 350 F.

Mix dry ingredients into one bowl and sift together.

In another bowl cream the margarine, add the brown sugar and cream together. Add eggs, buttermilk, vanilla extract and bananas. Cream together.

Slowly add the dry mixer into the wet mixer and blend together well.

Pour the mixture evenly between 2 round cake pans and even out by smoothing the tops of the batter once they've been poured.

Bake for approx. 35 - 40 mins on 350 F.
Be sure to check the center of the cake with a toothpick to see if it comes out clean. If not, leave it in for a few more minutes and check again.

Cool cakes completely before removing from pans.

For the icing, mix together all the ingredients and cream together well.

Lay bottom layer of cake (upside down) and spread some icing across the top. Add the top layer and ice cake completely. Add cinnamon sticks in the middle if desired.
