Ingredients

2 cups onion, chopped
5 cloves garlic, minced
2 lbs(approx) boneless skinless chicken breast, cut into bite size pieces
6 tbsp curry powder
2 tsp ground cinnamon
2 tsp paprika
2 bay leaves
1 tsp ground ginger
1 tsp white sugar
1 tsp cayenne pepper
2 tbsp Sriracha Chili Sauce, or other hot sauce
Juice of 1/2 a lemon
1.5 cups lite coconut milk
2 cups plain nonfat yogurt
2 tbsp tomato paste
1 tsp salt, or to taste
Directions
Chop onion & garlic. Cut chicken into bite size pieces. Add all ingredients to slow cooker. Cook on low for 6-8 hours. Makes 8 servings.
Serve with Basmati Rice and Naan if desired.
