Ingredients

    2 large eggs
    2 egg whites
    1 large scallion, chopped
    1 tomato, chopped
    1 tbsp chives, chopped
    2 oz. light cheddar cheese or any other low calorie cheese, shredded
    cooking spray

Directions

Blend the egg whites and eggs.
Pour egg/egg white blend into a greased and heated frying pan.
Add scallion, tomato, chives, and cheddar to eggs.
At this point, you can either scramble them, or make the into an omlette.
