Introduction

You'll need a powerful blender to turn the almonds into a powder. This is so much more delicious than any alfredo I've ever had with the cream and butter. Ingredients

    1/3 c. whole raw almonds
    1 T. olive oil
    1 medium yellow onion
    2 cloves garlic, minced
    1 12oz. package Mori-nu Lite Firm Silken Tofu
    1 T. miso
    1 t. nutmeg
    Real Salt to taste

Directions

Place almonds in a high-powered blender. Process until almonds are ground into a fine powder. Do not over-blend as they will start to become "almond butter." Scrape sides of blender periodically to ensure even processing.

Heat olive oil in a medium skillet over medium heat. Add onion and garlic. Cook, stirring very frequently, until onion and garlic start to brown. Pour directly into blender with processed almonds.

Add tofu, miso, nutmeg and salt to blender. Process on low, adding a small amount of almond milk through vent opening, until desired consistency.

Transfer to a medium saucepan over medium heat. Stir frequently until just heated through - do not allow to simmer or cook.

Makes 6 servings, approximately 1/4 c. each. If you're not vegan, you can add crab or chicken. If you are vegan, you can add seitan or chunks of regular tofu. (These items are NOT included in the nutritional information.) Serve over whole wheat pasta, brown rice, barley or vegetables.
