Introduction

A yummy vegetarian, high protein entree. I made this one day, while trying to use up veggies in the fridge. A yummy vegetarian, high protein entree. I made this one day, while trying to use up veggies in the fridge.

Ingredients

    1 Package Morningstar Farms Chicken Strips meal starter
    1 Red Pepper, seeds removed sliced in strips
    1 Yellow Pepper, seeds removed sliced in strips
    1 Onion
    1 Cup Cherry tomatoes
    2 small red potatoes
    1/2 Cup Celery chopped
    8 tbsp Taco Bell Taco Sauce
    2 tbsp Olive Oil
    4 tbsp Curry Powder (we call it masala)
    1 tsp Salt
    Red Pepper to taste

Directions

Chop up all the vegetables. Spray a large skillet with Pam. Add the 2 tbsp of Olive oil, and the veggies that take longer to cook first: potatoes, onions, garlic, and celery. Saute for a few minutes, then add the spices. Add water so the veggies won't burn. Add the peppers, tomatoes and taco sauce. Simmer till veggies are softened.

While veggies are simmering, microwave the faux Chicken Strips for 1-2 minutes.

Put the entire package of Morningstar Farms Chicken Strips meal starter in the skillet with the veggies and toss together for a couple of minutes. Do not overcook the fake chicken or it will get yucky.

Serve with roti, or fajita sized lo-carb tortillas.
