Ingredients

    2 envelopes active dry yeast
    2 cups warm water (about 105°)
    1/4 cup honey or granulated sugar
    3 tablespoons olive oil or unsalted butter
    2 tablespoons coarse salt
    3 cups all-purpose flour
    3 cups whole wheat flour, plus
    more flour, for dusting
    Cooking spray, for bowl

Directions

1. Sprinkle yeast on top of water in a large bowl. Add sugar, oil and salt. Allow to proof 5 minutes, or until mixture is foamy.
2. Add all-purpose flour. Mix until smooth, about 3 minutes. Add whole wheat flour; mix until combined.
3. On a lightly floured surface, knead dough, adding more flour as neccesary. Dough should be smooth, elastic and slight sticky, about 5 minutes.
4. Spray large bowl with cooking spray. Allow dough to rise in bowl until doubled, about 45 minutes.
5. Preheat oven to 400F.
6. Butter two 8 1/2" x 4 1/2" loaf pans.
7. Punch down dough and turn over onto a lightly floured surface.
8. Divide dough in half.
9. Gently knead each piece until smooth.
10. Shape into loaves. Tuck ends under. Tuck sides under to form seam down the middle.
11. Place seam side down into pans. Allow to rise until loaf reaches top of pans, about 20 minutes.
12. Brush tops with butter. Bake for 35-45 minutes or until golden brown and bottom sounds hollow when tapped.
13. Let cool in pans on wire racks.
14. Remove from pans and allow to cool until just warm before serving.

Makes 36 1/2" slices.
