Ingredients

    1/3 c. firmly-packed brown sugar
    1/4 c. butter (1/2 stick, softened)
    1/2 c. blackstrap molasses
    1 egg
    1 tsp. baking soda
    1/4 tsp salt
    4 tsp ginger
    2 tsp nutmeg
    2 tsp cinnamon
    1/3 c. hot water
    2.5 c. flour (I use WW bread flour)


Directions

Cream together brown sugar, butter and molasses. Add egg, beat until well blended.
Stir in baking soda, salt, ginger, cinnamon and nutmeg, then hot water.
Add flour and mix well. Drop dough from a level measuring teaspoon onto an ungreased baking sheet. This is easy if you scoop up the dough with a teaspoon then use the tip of a butter knife to pop the dough out. They can be placed 1" apart - these cookies do not spread.

Bake in a preheated 375 degree F oven for 7 minutes. The cookies should be puffed and feel solid in the center, but not be browned. Cool 2 minutes on cookie sheet, then move to a wire rack.
