Ingredients

    olive oil 1 t
    chorizo swiss deli 100 g,diced
    onion thinly 1, sliced
    celery stalks2, diced
    garlic cloves 2, crushed
    thyme fresh 2 t, chopped
    paprika 1 t
    tomatoes 2,diced
    chicken stock 1 l
    cannellini beans 2 x 400 g (14 oz) tins, rinsed
    sea salt
    ground black pepper


Directions

1 Heat the olive oil in a large pan over high heat and cook the chorizo for 3-4 min until crisp....... Drain on kitchen paper.

2 Reduce the heat to medium-low, add the onion and celery to the pan and cook, stirring occasionally, for 6-7 min until softend. Add the garlic,thyme and paprika and cook, stirring, for 1-2 min until fragrant. Add the tomatoes and cook for a another minute.

3 Return the chirozo to the pan with the stock and bring to the boil, reduce the heat and simmer, stirrring occasionally, for 10 min. Add the beans and cook for another 5 min. Season with salt and pepper just before serving.
