Ingredients

Fresh spinach, mushrooms, bell peppers, chicken, rainbow rotini pasta.
Directions
Makes 1 Serving , but easily can be doubled, tripled, quadrupled...
Start boiling the water for pasta. Meanwhile, chop the chicken thighs (you can use breasts if you prefer) into 1-2" pieces. Chop the bell pepper into 1" pieces or strips if you prefer, and slice the mushrooms. Saute the chicken with non-fat olive oil cooking spray. Put the pasta in the boiling water and boil for 9-11 minutes (or per the instructions on the box). On another pan, saute the peppers and mushrooms. Heat up the frozen edamame in the microwave for 4 minutes (according to package instructions).
When chicken is fully cooked, drain the pasta and throw into the pan, add the veggies (bell peppers, mushrooms, and edamame). Add salt, pepper, and garlic powder to taste. Serve on top of bed of spinach.
